Instructions
1. Bloom the Gelatin
- Add 3 tbsp gelatin to ½ cup cold water in a mixing bowl.

2. Make the Syrup
- In a saucepan, combine:
- 1 cup sugar
- 1 cup corn syrup
- ½ cup water
- Cook on medium heat without stirring until it reaches 115–118°C (soft-ball stage).
3. Whip the Marshmallow Base
- Start your mixer on low to break up the gelatin.
- Slowly pour the hot syrup into the bowl in a thin stream (careful!).
- Increase the speed to high and whip for 8–10 minutes until:
- Fluffy
- White
- Tripled in volume
- Add vanilla and salt during the last 30 seconds.
4. Set the Marshmallow
- Dust a tray or pan with the icing sugar–cornstarch mixture.
- Spread the marshmallow mixture evenly using a greased spatula.
- Dust the top again.
- Let it set at room temperature for 4–6 hours or overnight.
5. Cut & Coat
