This chili drumsticks are roasted and then slowly cooked in a chili sauce.

Ingredients

  • 4 chicken drumsticks (skin removed)
  • 1 garlic clove finely chopped
  • 1 tsp Paprika Powder
  • 1/2 tsp Coriander Powder
  • 1/2 tsp Salt
  • 75 ml water
  • Juice of half lime
  • 1/2 tbsp unsalted cashews
  • 1 tsp Chili flakes
  • 1/2 red medium onion
  • A few springs of fresh cilantro for garnish

Directions

  1. In a bowl mix garlic, red pepper, coriander powder, salt and juice of half lime.
  2. Divide the marinade over the drumsticks and leave in the fridge for 2 hours.
  3. Heat a grill pan and fry the drumsticks slightly brown.
  4. Grill them on all sides.
  5. Heat the oil and fry the onions, cashews and chili flakes for 4 minutes.
  6. Add in the water and stir for one minute.
  7. Add in the roasted drumsticks and stir into the sauce.
  8. Cover with a lid and simmer on low flame for 20 minutes.
  9. After 10 minutes turn the drumsticks over.
  10. Divide the drumsticks on a plate with the sauce and sprinkle with some oil.
  11. Garnish with fresh cilantro
