Ingredients for Ceylon Curry Powder

- 1 cup Coriander seed
- ยฝ cup Cumin seed
- 1 tablespoon Fennel seed
- 1 teaspoon Fenugreek seed
- 1 Cinnamon stick (about 5 cm (2″)
- 1 teaspoon Whole cloves
- 1 teaspoon Cardamom seed
- 2 tablespoon dried curry leaves
- 2 teaspoons mustard seed
- 1 tablespoon Turmeric
- 2 tablespoon Chili powder
Instructions for Making Ceylon Curry Powder
- In a dry pan over low heat, roast the coriander separately. Also, roast the cumin, fennel, and fenugreek. Stir constantly until each one becomes a fairly dark brown.
- Do not let them burn.
- Put into grinder container together with cinnamon stick broken in a pieces, the cloves, cardamom, and curry leaves.
- Grind on high speed until finely powdered.
- Combine with chili powder and ground rice if used.
- Store in an airtight jar in a cool, dry place for up to 3 months.
I used that 1 tablespoon of curry powder is typically enough to season one recipe of curry for 4 people.
