Nothing’s more nourishing on a cold winter day than a warming bowl of oatmeal served with love. This oatmeal recipe combines blueberries, homemade black currant preserves, ginger, apples and moringa for a delicious party in your mouth paired with immense benefits. It’s all in the bowl: antioxidants, vitamin C, protein, digestion boosting enzymes and fiber. Pumpkin seed butter drizzle makes it extra festive, combining fun purple color with healthy green. Oats are your canvas, remember?

Depending on what you have available, make your own twist on this Superfood Galaxy Blueberry Oatmeal.

Ingredients:

Directions:

  1. Combine 1/2 cup oats and 1 cup water in a pot, bring to a boil and cook for about 5 minutes on medium heat.
  2. Add 1 cup blueberries and 1/2 chopped apple and cook a few minutes, until the oatmeal turns purple – wow!
  3. Pour 1/3 cup almond milk, 1 teaspoon cinnamon, and cook until the oatmeal thickens.
  4. Pour into a bowl and mix in preserves (I used grandma’s black currant preserves), honey or brown rice syrup and mix well.
  5. Top with pumpkin seed butter (I recommend Dastony), Moringa, pumpkin & sunflower seeds.
