Ingredients
- 2 cup Shredded mozzarella cheese
- 3 oz. Cream cheese, softened
- 1 ½ cup Almond flour
- ½ tsp. Baking powder
- ¼ tsp. Xanthan gum
- ½ tsp. Garlic powder divided
- ½ tsp. Italian seasoning divided
- 1 Large egg
- 1 Tbsp. Flaxseed meal
- Pinch of salt
- 2 Tbsp. Butter
- 3 cup Raw spinach
- 1 tsp Minced garlic
Instructions
- Add the butter to a skillet over medium heat.
- Stir in the garlic and saute for 30 seconds.
- Mix in the spinach, and cook until wilted. Remove from the heat and let cool.
- In a bowl that is microwave safe, combine the mozzarella and cream cheese.
- Heat for 30 seconds at a time until melted and well combined into a dough.
- Add the cheese dough to a mixing bowl with the almond flour, baking powder, xanthan gum, ¼ tsp of the garlic powder, ¼ tsp of the Italian seasoning, pinch of salt, egg and flaxseed meal. Beat on high until well combined.
- Divide the dough in half, and roll each half into a rectangular shape that is roughly the same size as the other.
- On one half of the dough, spread the spinach mixture all over the surface.
- Place the other layer of dough over the first, and press the edges closed.
- Use a cookie cutter to cut out the outline of a Christmas tree.
- Make small cuts on each side of the tree in the same position as the other.
- Twist each cut piece of dough to form branches.
- You can form the extra pieces of dough and filling that you cut off into balls to serve alongside the tree for zero waste.
- Top with the remaining garlic powder and Italian seasoning.
- Bake for 20-25 minutes until golden brown.
