Ready to take scrambled eggs to a whole new level? Here’s the secret: flavorful halloumi cheese, scallions and beef. Enjoy this keto goodness for breakfast or lunch… it’s absolutely sizzling!

Ingredients

75 g halloumi cheese, diced

110 g beef, diced

2 tbsp olive oil

2 scallions

4 eggs

120 ml fresh parsley, chopped

120 ml pitted olives

salt and pepper

Instructions

  1. Dice halloumi cheese and beef.
  2. Heat olive oil on medium high in a frying pan and fry halloumi, scallions and beef until nicely browned.
  3. In a small bowl, whisk together parsley, eggs, salt and pepper.
  4. Pour the egg mixture into the frying pan over the beef and cheese. Lower the heat, add the olives, and stir for a couple of minutes.
  5. Serve with or without a salad.

Tip!

Exclude the beef to make it vegetarian. You may also replace the halloumi cheese with a different cheese such as mozzarella or feta. If you substitute the cheese, do not fry it; just add it in towards the end.
