Given that eggs are one of the most versatile ingredients, deciding what to do with them can sometimes be a little overwhelming. Do I want to make an omelette? Fried Eggs? Boiled? Scrambled? There are so many choices, that sometimes at breakfast we can feel a bit spoiled for choice. And when you just want to whip something up quickly with minimal dishes, ingredient and preparation, you need something dynamic, yet simple.ADVERTISEMENT
Plus, they’re really good for you in terms of nutrition, so go ahead and have them for breakfast, lunch, and dinner. And you don’t need to be a chef to handle eggs so don’t worry.
Here’s a simple recipe with eggs that you can do with just one pan.
Eggs are always guaranteed to tickle the palate.
This is a one-pan recipe. Pretty self-explanatory. It is fun, easy, and simple so from preparation to cleaning up won’t be intimidating. The ingredients you’ll need are found in most pantries. Or head on down to your local grocery if you don”t.
You will need:
- 1 slice of bread
- 1 or 2 slices of your favorite cheese
- 2 eggs
- a pinch of salt
- a pinch of blackpepper
- butter
For variety, you may add:
- salami or pepperoni (why not both?)
- black pepper or paprika
Note: These ingredients are for one small toast sandwich. Double the portions for two!
Directions
- Start by slicing your preferred bread. Most people would go with white, but really, go for what your heart tells you. Don’t be afraid to experiment. Slice them symmetrically though as they’ll need to match when folded.
- Now for the cheese!
- Again, use what you want (to each his own) according to your pockets. Though it should be a type that will melt easily like cheddar, provolone, mozzarella, and the like. Do consult your local deli if need be.
- Now grab those eggs and crack them in to a mixing bowl. Give them a good whisking. Add some salt. Seeing as this is a recipe that can be done to suit one’s personal taste, why not add in some of your favorite herbs? Just remember to keep things simple.
- Heat up a pan over low heat.
- With a bit of butter, spread it over the pan making sure to cover the entire surface. Take those freshly whisked eggs and pour them in to the pan slowly, again making sure to cover the whole surface. Your other ingredients should be within easy reach as this is where the fun part happens.
- Place each slice of bread into the pan to soak up the uncooked egg, then turn over. You want the egg to be soaked through with uncooked egg. When both sides are soaked, allow the egg to cook as you would an omelette. For bonus points you should make sure the pieces of egg are cut-side together. This will make it look better when you fold it over.
- Once the egg is lightly cooked through, flip the whole thing over. This will cook the “outside” of the sandwich. Allow this side to cook.
- Go ahead and put the cheese on that blank canvass. How about the other side, you ask? That’s where your creativity comes in. Let it cook until it’s like a perfect omelette or to your satisfaction depending on how crisp and melted you want it to be.

- Once your sandwich is loaded up, let it cook until nicely golden brown, again like an omelette. This is also to your personal preference if you like it cooked more or less, just give that cheese enough time to melt. When it’s had enough time on one side, flip it over to do the other side.
